    Mix both batters well and keep them covered in a warm place for around 8–12 hours, or until the batter has risen. Fermentation is one of the key steps for getting soft and airy idlis.
  4. Prepare the moulds
    Grease the idli plates lightly with oil. Avoid filling the moulds completely because the batter needs room to expand.
  5. Steam the idlis
    Pour the batter into the moulds and place them inside the steamer. Steam for approximately 10–15 minutes, depending on the size of the idlis and your steamer.
  6. Cool slightly before removing
    Let the idlis rest for a few minutes after steaming. Use a wet spoon to gently loosen the edges and remove them from the moulds.
