For children who are reluctant to eat vegetables, adding colourful ingredients and presenting the meal creatively can make a big difference. Tomato, spinach, peas, carrots, paneer and colourful vegetables can turn an ordinary rice dish into an attractive and wholesome meal.

Why Basmati Rice Is a Popular Choice

When it comes to preparing flavoured rice dishes, basmati rice is a popular choice. Its long grains, distinctive aroma and fluffy texture make it suitable for pulao, fried rice, biryani and a variety of rice preparations. The grains tend to remain separate when cooked properly, which also makes colourful rice dishes look more appealing when served.

Ingredients

  • 1 cup basmati rice
  • 2 medium ripe tomatoes, finely chopped or pureed
  • 1 small onion, finely chopped
  • 1–2 green chillies, optional
  • 1 teaspoon ginger-garlic paste
  • ½ teaspoon turmeric powder
  • ½ teaspoon chilli powder, or according to taste
  • ½ teaspoon garam masala
  • 1 tablespoon oil or ghee
  • 1 small piece of cinnamon
  • 2 cardamoms
  • 2 cloves
  • 1 bay leaf
  • Salt, to taste
  • Fresh coriander leaves
  • 1¾–2 cups water, depending on the rice and cooking method

Method

Step 1: Wash and soak the rice

Wash the basmati rice gently until the water becomes relatively clear. Soak it for around 15–20 minutes and drain.

Step 2: Prepare the tempering

Heat oil or ghee in a pan. Add cinnamon, cardamom, cloves and bay leaf. Allow them to release their aroma.

Step 3: Add onion and ginger-garlic

Add the chopped onion and sauté until soft. Add ginger-garlic paste and cook for another minute.

Step 4: Add tomatoes

Add the chopped or pureed tomatoes. Cook until they become soft and the raw smell disappears.

Step 5: Add the spices

Add turmeric, chilli powder, garam masala and salt. Mix well.

For younger children, keep the spice level very mild and skip green chillies.

Step 6: Add rice

Add the soaked and drained basmati rice. Gently mix it with the tomato mixture without breaking the grains.

Step 7: Cook

Add water, cover and cook until the rice is tender and fluffy. You can also prepare the dish in a pressure cooker or rice cooker according to the appliance instructions.

Step 8: Garnish and serve

Fluff the rice gently with a fork and garnish with fresh coriander leaves. Make Tomato Rice More Attractive for Kids
